I have 3 favorites:

dolmades with lamb sausage, mint and chipotle spice.

salmon wrapped in grape leaves, BBQ’d. Dipping sauce as you like. Good cold or hot.

BBQ’d fresh oysters in the shell, with melted butter and garlic. We have roughly 1,000 oysters bagged on the beach.

There was a pizza chain in my old stomping grounds that offered a "Hot Hawaiian." It had bacon addition to the pineapple, peppers, and ham. I seem to recall it had barbecue sauce instead of the typical tomato sauce.

Wow, I didn't expect so many fellow yes-sayers! I LOVE it, the combo is awesome IMO. However, most people I know don't like it (I can understand, it's just not for everyone). I also thought I was gonna start a war when I posted that, but it's been very civilised so far, phew😅

Also, there's a dish called "Toast Hawaii" where I live. It's a slice of toast, with ham, a slice of pinapple and cheese over the top (you can add a cherry as well, if you like). Put it in the oven and take it out when the cheese is golden-brown. You won't regret it ;)

A slice or two of Spam would work equally well. Hawaiians consume the most Spam, per capita, in the world.

But no Spam for me tonight. I'm (very slowly) boiling up some water for cookin' shrimp.

Had ham steaks with artichokes last night. Large artichokes at Walmart were $1.49/each!!

cut the tops down around 2” and spread open for the steam, cook upside down. There are special holders for cooking them.

poor man’s hollandaise sauce:

melted butter

mayo

lemon jiuce

cayanne pepper to taste.

Tonight was off the beach! Fresh mussels we planted last year. White wine  base with garlic, onions, and shallots.

walmart 3-cheese garlic knots to sop up the base.

Yep, stocking up for winter. We pulled almost 30 today in 4 pots. Kept 10, but what we threw back was legal sized, so they’ll probably be back in the pots tomorrow😎

Making my chili this weekend....

Ground Beef

Butter Beans 

Northern Beans 

Kidney Beans 

Chili Beans 

Stewed Tomatoes 

Vandalia Onion 

Sweet Orange and Yellow Bell Pepper 

Rotel "Chili Fixins"

McCormick Chili Seasoning (Mild)

Chili Seasoning 

Fresh Garlic 

Add other ingredients per preference, tone it down or fire it up per taste (The Rotel and McCormick add an exceptable zip for most), but that's my base.

Tweak it how you may...

Last week I made my first chili mix from scratch.   

Homemade Chili Seasoning - Budget Bytes

I used fresh garden tomatoes, onion, bell peppers, my last two cans of beans from the pantry (can't remember what they were), and this seasoning which I had finally gotten the last ingredient for.  Was interesting.  A little strong but maybe I just used too much of it.  Will be fun to play with it. 

No meat, but not because I'm a vegetarian.  I just didn't have any meat and didn't want to shop, yet I needed something to do with my final tomato harvest.

Not familiar with that.  Very uneducated palate as far as peppers are concerned.    Will be on the lookout for an opportunity to try.

Hatch is a small community in southern NewMexico, famous for its Chile types. From mild to extra hot.

just bought 25lbs (hot) fresh roasted last month. Making salsa and rellenos. All winter.

Of course I do enjoy a good block of Limburger cheese--with some sliced garlic "summer" sausage on the side😁

Food is all good--there is nothing that I will not try.

They just extended the season thru12/31. Kept 3 2lb crabs today, let the rest go. It has been crazy, the neighbors are loving us.
