Last night hubby brought me home a small pot with fresh cilantro growing in it.
And OMG ... one taste and I was in heaven.
I'd been using dried cilantro for cooking and the fresh is so different. Before I tasted the fresh last night I had no idea it was the primary ingredient in the "spring rolls" I used to get in Oklahoma. Here in Wisconsin the "spring rolls" are deep fried and I don't know what their ingredients are. But in Oklahoma they're cool and crisp and not fried. And apparently they have cilantro.
This may not be a surprise to anyone here but it was a revelation to me. Before that I only knew of cilantro as an ingredient of pico de gallo. I never made the connection. But one taste of the fresh and it was like having those spring rolls that I missed so much.
So today I used some in a rice dish and oolala, so wonderful.
